Spaghetti Squash

I've decided upon my new vegetable to learn to cook is going to be squash. I already like the regular yellow squash, and there are several variates of squash that can be yummy and healthy to cook. On our way back from College Station a few weeks ago, we stopped at a small farmer's market & I had the overwhelming urge to try spaghetti squash.

The biggest reason being that it came with cooking directions included, and they looked simple enough that even I could handle it. Besides, I'm missing all the great summer fruit if I keep procrastinating on my 101 list.

Easy steps to cooking a spaghetti squash:
Wash the outside & cut in half.

Clean out the seeds.
(I couldn't decide it it reminded more of a cantaloupe or a pumpkin on the inside.)


Place both halves face down in an oven safe container with about 1/2" water.

Bake at 375 for 30-45 minutes & then scrape the inside. I was amazed that, indeed, it did resemble spaghetti noodles.

It really has very little flavor, so you can spice it up with just about anything you like. I think I went for the garlic salt & some pepper. And a steak & potato on the side.

I remember getting spaghetti squash at my uncle's house when I was a kid and feeling cheated. "This isn't real spaghetti! Where are the meatballs!" Since then I've grown to like it though. ;-)
