Stuffed Bell Peppers

This was a wonderful meal I made a few weeks ago. Growing up, my mom would make stuffed bell peppers for us a few times a year & it was YUMMY!

The bell peppers were on sale for $.50 each, so I grabbed a few, washed them off, cut off the top and removed the seeds. The secret trick my mom told me was to put a little bit of water in the bottom of the bell peppers, and then microwave them for about 90 seconds. A quick steaming before hand makes them nice and soft.

I browned a pound of ground meat in a skillet.

Cooked 1 cup of rice.



I mixed the rice and beef with a can of spaghetti sauce.

I emptied the water out of the bell peppers, but then I added a bit of Parmesan cheese to the bottom.

Fill to the top with your stuffing, putting any extra in the bottom of the dish. Top with more Parmesan cheese.

Bake for 30 minutes at 350.
Then enjoy!
